This is a delicious cake and is perfect for surprising a friend or relative; you can&#8217;t go wrong with chocolate, surely everyone around the table will enjoy a piece. Serve with milk of choice or a cup of joe for better feedback.</p>
<p>Makes 12 to 16 servings</p>
<p><strong>What you’ll need:</strong></p>
<p>• 1/2 cup refrigerated or frozen egg product, thawed, or 2 eggs<br />
• 3 tablespoons butter<br />
• 1 1/3 cups cake flour or 1-1/4 cups all-purpose flour<br />
• 1/3 cup unsweetened cocoa powder<br />
• 1 1/2 teaspoons baking powder<br />
• 1/4 teaspoon salt<br />
• 1/4 cup 60% to 70% tub-style vegetable oil spread, chilled<br />
• 3/4 cup sugar or sugar substitute blend* equivalent to 3/4 cup sugar<br />
• 1 teaspoon vanilla<br />
• 3/4 cup fat-free milk</p>
<p><strong>Directions</strong></p>
<p>1. Allow eggs and butter to stand at room temperature for 30 minutes. Meanwhile, grease and lightly flour two 9&#215;1-1/2-inch or 8&#215;1-1/2-inch round cake pans; set pans aside. In a medium bowl, stir together flour, cocoa powder, baking powder, and salt; set aside.<br />
2. Preheat oven to 375 degrees F. In a large bowl, beat vegetable oil spread and butter with an electric mixer on medium to high speed for 30 seconds. Gradually add sugar, about 2 tablespoons at time, beating on medium speed until well mixed, scraping side of bowl constantly. Beat on medium speed for 2 minutes more. Gradually add eggs, beating well. Beat in vanilla. Alternately add flour mixture and milk to butter mixture, beating on low speed after each addition just until combined. Spread batter into the prepared pans.<br />
3. Bake for 12 to 14 minutes or until a toothpick inserted near centers comes out clean. Cool cake layers in pans on wire racks for 10 minutes. Remove cake layers from pans. Cool completely on wire racks.</p>
<p>Sugar Substitues: 4. Choose Splenda<sup>®</sup> Sugar Blend for Baking. Follow package directions to use product amount equivalent to 3/4 cup sugar.PER SERVING WITH SUGAR SUBSTITUTE: Same as above, except 157 cal., 20 g carb.</p>

<p>Serves: 4 • Serving Size: 1 pepper</p>
<p>If you want to use the regular oven for this recipe, bake stuffed peppers at 350 degrees F for 20-25 minutes.</p>
<p><strong>What you&#8217;ll need:</strong></p>
<p>1 Tbsp canola oil</p>
<p>2 Tbsp sofrito</p>
<p>½ lb lean ground turkey</p>
<p>½ lb extra lean (4% fat) ground beef</p>
<p>¼ cup tomato sauce</p>
<p>1 Tbsp tomato paste</p>
<p>4 medium green or red bell peppers</p>
<p>¼ cup water</p>
<p>½ cup fat-free grated cheese (mozzarella, muenster, jack, asadero, or cheddar)</p>
<p><strong> Directions</strong></p>
<ol>
<li>Heat oil in a medium skillet over medium-high heat. Add sofrito and sauté 3-4 minutes. Add meat and brown 5-6 minutes. Stir in tomato sauce and paste. Reduce heat, cover, and cook for 10 minutes.</li>
<li>Meanwhile, wash peppers. With a small knife, carefully cut a small circle around the stem area. Lift the stem and remove the seeds. Rinse peppers to remove any seeds.</li>
<li>Place peppers in a 3-inch-deep microwave-safe dish next to each other so they support each other standing.</li>
<li>Add water and cover with microwave-proof plastic wrap. Cook at high power for 2-3 minutes or until the peppers are slightly soft. Remove from the microwave and drain. Careful—the peppers are hot!</li>
<li>With a soup spoon, fill peppers with meat filling. Cover the opening of each pepper with 2 Tbsp grated cheese. Place stuffed peppers back in pan. Cover and microwave 4-5 minutes.</li>

<li><strong>Betty Crocker&#8217;s Diabetes Cookbook</strong>: This book does not completely eliminate white sugar from your diet. Rather, it uses sugar as an ingredient in some recipes, while still keeping the goal of healthy, manageable eating.</li>
<li><strong>The Joslin Diabetes Quick and Easy Cookbook:</strong> This book shows you that you don&#8217;t need to cook for hours to have a delicious meal. The sidebars throughout the book offer time-saving techniques and helpful cooking and preparation tips for diabetic-friendly meals.</li>
<li><strong>Eating Well Diabetes Cookbook:</strong> Produced by <em>Eating Well </em>magazine, this book includes recipes on how to eat healthy while traveling, shares diverse menu plans, and provides over 100 tips on how to control carbohydrate intake.</li>
